This recipe is easy and delicious. My kids love pancakes, but I would rather avoid sitting at the stove flipping pancake after pancake… the answer:

Preheat oven to 450 degrees.

Mix in blender:
6 eggs
1 cup whole wheat flour
2 T maple syrup
1 cup milk or buttermilk
3 T melted butter or EVOO

Pour into 13×9 greased baking dish. Cook for 20-30 minutes or until puffy, golden, and cooked through.

Top with: maple syrup; cook come blueberries in maple syrup and top; sliced apples cooked with honey and cinnamon; maple syrup, banana slices, and walnuts; PB and J; fresh berries; strawberries and whipped cream…
